This is a super easy big snack or meal. Not too many ingredients but a great combination of flavors. The starchiness of the yam makes this dish a total comfort food and its sweet flesh is the perfect bowl for the tart filling.
If you're short on time or making this in the office break room you can cook everything in the microwave. Pierce the skin of the yam a few times, wrap it in a damp paper towel and microwave on high for about 5 minutes. Split it open and stuff it, then nuke for another 30 seconds.
If you need to satisfy a sweet tooth, a drizzle of honey would take this yam to the next level for sure.

1 yam- about 8 oz.
1/3 granny smith apple, diced
2 tbsp plain greek yogurt
Pinch cumin
Pinch cinnamon
Method:
Pierce the skin of the yam several times with a fork or a knife. Wrap in tin foil and place in a 400 degree oven for about 40 minutes of until the meat of the yam is tender. Split the yam down the center and gently spread the meat and skin apart to make space for the apple stuffing.
In a bowl combine apple, yogurt and spices. Spoon stuffing into the yam, place stuffed yam in an oven safe dish and return to the oven for about 5 minutes, just to heat throughout.
